South African Rusks - NOT Coeliac friendly
1.5kg selfraising flour
3 eggs
250ml cream
500ml buttermilk or plain yoghurt
250 ml sugar
250g butter
5ml salt
Rub butter into flour.
Beat eggs and sugar.
Add buttermilk (yoghurt)
Mix to a soft dough.
Form balls of dough & pack tight in a greased dish.
Bake at 180c or 350f for 35 minutes.
Break cooked balls and spread them on the wire racks in the cooker.
Dry overnight in cooker on a low temperature - 80c or so.
