Fruit Cake

It's the time of year to start on the fruit cakes for Christmas.  This year I am going to make 4 of them, and today I weighed and prepared the fruit, added the Brandy, and will leave them to soak for a couple of days before baking them.  After they come out of the oven, they are splashed with more Brandy and then well wrapped up in aluminium foil.  Then, every Friday until Christmas, they will be unwrapped, have a little more Brandy sprinkled on to them, turned onto their other side and rewrapped in kitchen foil.  By the time Christmas comes, they will have matured and taste gorgeous.
